good old osts huh? yeah escaflowne definitely comes to mind. two more good oldies from anime would be the osts for rurouni kenshin (osts 2 and 3 comes to mind) and utena. for games, xenogears, vagrant story, final fantasy tactics, tactics ogre and suikoden.

The RahXephon soundtracks and the Genso Suikoden soundtracks (the piano collections, at any rate) might be right up your alley.

I'd also highly suggest any of the FF or Tokimeki Memorial piano collections (but I'm admittedly biased towards piano arrangements).

Oh, don't forget the Orchestral Game Concert series. There's 5 discs' worth IIRC. I still chuckle when I hear the music from Super Mario Bros. being played by a full orchestra. :)

Let me advertise my own torrent of Orchestral Game Concerts (1-5) (http://www.hongfire.com/forum/showthread.php?t=4023), as they are one of my favourites :).

Genso Suikoden OSTs are also great (especially the one for Suikoden II, but the preview for Suikoden IV OST is also promising, not to forget the great opening song from Suikoden III: Exceeding Love).

From the Final Fantasy OSTs, the one for Final Fantasy XI is my favourite, along with the Symphonic Concert.

And Chrono Cross has the best guitar melodies, ever.

Check out Rurouni Kenshin Seisouhen OST. It's one of my favs. Iwasaki Taku did a great job on this one.

Like goggles_aniki said above, Iwasaki Taku is deffinately a talent composer, I love his Rurouni Kenshin work as well as well as Now and Then Here and There. I highly recommend. Another great composer is Yasunori Mitsuda, The composer of Xenogears. Mitsuda has a wide gamut of compositions, from solos, duets, concherto(cant spell) all the way up to fully symphonic. He uses wide variety of instruments too. And of course, lots of styles, including baroque, classic, 'neo-classical', folk, celtic.... goes on and on. You should check it out.

For the anime classical music I would have to say the Shingetsutan Tsukihime OSTs and the Nightwalker OST. I just like the combination of the dark, sadness, and mystery that each song brings in their tones. For games, I would say Chrono Cross.

Joe Hisaishi OSts
like laputa,totoro,grave of the firefiles....
super good IMO
you just can't stop listening to them

to continue... Naussica, Kiki's Delivery Service, Princess Mononoke, Spirited Away, Kikuchiro no Natsu (not anime), etc.
His works are really classical in anime history.
Possibly addictive as well.

Can't wait to listen to his new OST for Hauru no Ugoku Shiro this year >.<"

of course, my baby Juuni Kokuki:
Yeah, the all 5 discs are gonna be my all time favorite (and the anime too)

I'm sorta inclined to think that the best kinda of OSTs are the ones that are sentimental to you. Really, OSTs just remind you of those moments in games/anime/movies, whether it be the opera from FF6 or Shinji Ikari screaming at the top of his lungs beating up an angel.

I would say to look for a series that you really loved and then buy the Orchestral OST that fits the description. As for my favorites, I would say FFVI: Grande Finale by Nobuo Uematsu, (Wind) Inuyasha, Phantasmagoria (Original Music by Nobuo Uematsu), and probably the OST to .Hack/sign- there's a lot of good stuff on that. I hope this helps. ^_^

I would recommend the torrent I upped a week ago.
It's the Dragon Quest Symphonic Suite and features music that is
as classical as it can get.
The Juuni Kokuki Soundtracks are awesome as well.
You should note that those OST's sound like traditional asian music and not like
western classical music.
The Shenmue Orchestra Version is also worth mentioning.
Moreover the Xenosaga OST is almost fully orchestrated and has a amazing full sound.
Last but not least I would check out the Y's Symphony Soundtracks. These are without a doubt perfect "orchestrated" works.

The Macross Plus OST is good. I love the music. Even went so far as to learning to play a song on the violin

Symphony of the Miyazaki films are great

true, id also add xenosaga, both crono trigger/cross, baten kaitos (really good), valyrie profile, and personally i really like the suikoden soundtracks. also, disgaea has a good sountrack, although calling it symphonic would be off.

the soundtrack to Avalon is pretty impressive. so is the symphonic collection for inuyasha. another kickass one is Iczelion, which has a nice blend of techno & classical styles.

My Favorites include-
--Laputa symphonic suite
--Mononoke
--Avalon
--Jin Roh
--Patlabor 2
From this side of the sea I'd reccomend-
--The Last of the Mohekans
--Gladiator
...and If you liked the Akira soundtrack, try Koyaanisqatsi by Philip Glass. The Akira OST was modeled after this album.
